I give you the gift of this Creamy Double-Baked Potato Bacon Casserole. It won’t be “Love on the Rocks” with this menu choice!
1 1/2 pounds of potatoes cut into cubes
1 tablespoon olive oil
1/2 teaspoon pepper
1 teaspoon salt
1 1/2 cups sour cream
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon nutmeg
2 tablespoons fresh parsley, chopped
1 cup cooked bacon, chopped
1 cup mozzarella, shredded
1 cup cheddar, shredded
Sliced green onions, for garnish
Preheat oven to 375°
In a baking tray, combine potatoes, olive oil, salt, pepper. Stir to combine. Cover with foil & bake for 45 minutes
In a bowl, combine sour cream, garlic powder, onion powder, nutmeg & parsley.
Remove potatoes & layer with sour cream mixture, bacon and cheeses
Cover with foil, return to oven for 15 minutes. Remove foil & bake an additional 10 minutes
Allow to cool for 5 minutes, garnish with green onions
Serve with a nice grilled steak or chop. Mmmmm good.
Pair a nice Cabernet Franc or choose Carignan from Southern France or Spain, or try a Grenache
from the Southern Rhone Valley.
