Denny Diamond a Neil Diamond Tribute

May ‘2017’ Spring? Not quite…

Here it is May already, lots of rain here in Northern Illinois, and even tho we have had some 70’s and 80’s, we’re having a chilly start to May. We hope everyone can come to our show in Romeoville on the 3rd, doors open at 11:30 A.M. With good chicken, good fun, and great music, it’s sure to warm your heart! Call to secure your reservations. 815-893-9202

Also want to remind you to come out to the Woodstock Opera House, May 20th. Please check out their website for all the details.

I give you the gift of this Creamy Double-Baked Potato Bacon Casserole. It won’t be “Love on the Rocks” with this menu choice!

1 1/2 pounds of potatoes cut into cubes
1 tablespoon olive oil
1/2 teaspoon pepper
1 teaspoon salt
1 1/2 cups sour cream
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon nutmeg
2 tablespoons fresh parsley, chopped
1 cup cooked bacon, chopped
1 cup mozzarella, shredded
1 cup cheddar, shredded
Sliced green onions, for garnish

Preheat oven to 375°
In a baking tray, combine potatoes, olive oil, salt, pepper. Stir to combine. Cover with foil & bake for 45 minutes
In a bowl, combine sour cream, garlic powder, onion powder, nutmeg & parsley.
Remove potatoes & layer with sour cream mixture, bacon and cheeses
Cover with foil, return to oven for 15 minutes. Remove foil & bake an additional 10 minutes
Allow to cool for 5 minutes, garnish with green onions
Serve with a nice grilled steak or chop. Mmmmm good.

Pair a nice Cabernet Franc or choose Carignan from Southern France or Spain, or try a Grenache
from the Southern Rhone Valley.
Enjoy those MAY FLOWERS with a picnic on the deck perhaps.
